Apple Harvest Tuna Salad

Cold Tuna Salad is a deliciously classic dish. It is amazing how a few tuna salad ingredients consistently produce a delicious meal or fresh appetizer time after time. Crisp apples and pecans give crunch to this recipe and honey brings them both together. Best of all, it can be easily adapted to be Paleo friendly!

  • Medium Mixing Bowl
  • Chef’s Knife
  • Cutting Board
  • Measuring spoons and cups

Ingredients

  • 2 cans Safe Catch Elite Tuna
  • 3 tbsp Classic Mayo Paleo-Avocado Oil Mayo
  • 1 tbsp Dijon Mustard
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Honey Paleo-Raw, unfiltered honey or omit
  • 1 tbsp Flat-Leaf Parsley
  • 1 Tbsp Dried Tarragon
  • 3/4 cup Unpeeled Honeycrisp Apple or Apple of Choice
  • 1/4 cup Chopped Pecans
  • Salt and Pepper to taste

Instructions

  • Open each can of Safe Catch Elite Wild Tuna (Do not drain), then flake with a fork until all liquid is absorbed by the tuna, then empty into a medium mixing bowl
  • Add all wet ingredients to mixing bowl
  • Knife Work: Finely chop flat leaf parsley, coarsely chop pecans, then add to mixing bowl with other dry ingredients
  • Gently stir all ingredients until completely combined
  • Slice remaining apple, to serve with salad

SERVING SUGGESTION
For a fresh, crisp lunch for 2 or a hearty appetizer for 4 serve as a salad with slices of apple or add to a green salad.
