Quick and Easy Mediterranean Tuna Salad



  • 3 cans of Safe Catch tuna
  • 1 cup raw quinoa
  • 1 red bell pepper
  • 1 Persian cucumber
  • 1/2 cup pitted kalamata olives
  • 1/2 cup sliced pepperoncini
  • 1/2 cup sun dried tomatoes
  • 3/4 cup red wine vinegar dressing

Tools you'll need

  • Medium Mixing Bowl
  • Pot for Boiling Quinoa
  • Measuring Cups


  • Cook the quinoa according to instructions and set aside.
  • Dice bell pepper and cucumber.
  • Open safe catch tuna, do not drain, and stir into quinoa.
  • Stir in olives, bell pepper, pepperoncini, cucumbers, and sundried tomatoes.
  • Toss with red wine vinaigrette and serve with salt and pepper to taste.
