    Default Vegetarian meals

    Awhile back one of you asked me to share my weekly meal plans for our vegetarian household. At the time I was moving, and pregnant (and overwhelmed by the thought of writing down what I cook every day)...yes, and a bit lazy (and full of excuses).

    thanks for starting the group!! I want to make the lentil taco recipe you shared. I really need to add some variety to our meals. My goal is 1 new recipe every 1-2 weeks. Next week, I'll be trying chickpea burgers!

    Lisa - what recipe are you using for chickpea burgers? I have tried many veggie burgers, and have one that I make often, but am always looking for more! The lentil tacos are awesome, and I am a sucker for any recipe that is easy, cheap, healthful, and versatile!

    A friend posted about her meal planning and meantioned chickpea burgers. She told me this about her recipe:

    "This is the one I use. I use canned chickpeas, though. I also add about a cup of water to the mix because we prefer them smooshy as opposed to crumbly. I also halve the cayenne (and it's still spicy!) I make my own sauce with it (sour cream, lime juice, onion powder, garlic powder, salt, pepper. Just keep adding and testing 'til it tastes right.)"

    DH loves them. DS1 is so-so with them. DS2 has not tried them yet, but my guess is that he will love them!

    I'm not on FB, but I had to tell some fellow vegetarians that I made the most awesome recipe tonight.

    It's Cauliflower Cheese Pie from the Moosewood Cookbook.

    I'm so excited! I made two because the prep time was really long and I know it will freeze well. Looks like this:

    Abbeysmom - that looks really good! I don't eat eggs, but I but it would come together fairly well with an egg replacer! Thanks for sharing!

    Lisa - I tried the chickpea burgers tonight! They really do have a nice flavor! Pretty crumbly though Did your come together well?

    they were pretty crumbly*My friend said that she added some water to it, so I did the same, though I will probably add even more next time.

    Yup... I will more than likely stick to my old black bean and veggie recipe, however in the process of trying this one, I learned that a little raw honey is great in bean burgers!

    did the recipe call for honey? I don't remember having it in mine. Would you mind sharing your recipe? I dont like the taste of black beans as much as chickpeas, but I know DH loves black bean burgers

    I'll have to remember to join later (when I am home) I love veggie recipes (although I usually have to add some meat for my carnivore of a husband!)

    We are not fully vegetarian but we are eating very little meat and have been cutting out some animal proteins. I love getting new recipes and usually use pinterest. I joined the group and am excited to get some new ideas!
