View Full Version : Food Safety Question...

Okay so this is more of a random type post... but I needed answers quick because I am in the middle of preparing the dinner I am asking about lol! I am making egg plant parm... I started to make it yesterday.. I was all set.. Sauce was made egg plant sliced and ready to be dipped in egg and breaded... No breadcrumbs! And no way of getting them since dh was working (he had our only car and we live in the country)... So I squeezed some lemon juice on them and put them in the fridge. Now today I took them out and they turned pretty brown... some of them were fine but about a little less then a quarter of them are pretty darn brown. They smell fine, actually the smell makes me think of a fresh salad. I'd hate to throw them out... but they look pretty gross. So what do you think, okay to use? or not? TIA

i believe that once they go brown they are not as good....i tried to cook them once like that and they did not taste good.....
sooo based on my previous experince i would throw them away

Eggplant turns brown easily. It should taste fine.

I'd try one. But yeah, I know that even when I salt them/leave them out for 30 minutes, the edges get brown and they still taste fine.

Yeah, I'd still use them anyways. I'm sure they're fine.

Okay well as long as they're not dangerous or anything I think I will use them. There's a bunch that are fine so even if they aren't very flavorful they'll be mixed in with the rest and covered with sauce and cheese. So I was more worried about if they were safe, and sounds like they are. Thanks!

Yupp it's fine. Eggplan gets brown SO fast!

They are fine in terms of safety and probably taste. I love eggplant and I know from experience that it turns brown easy. I would not throw it away. I know that once sliced & refriregated, it may not taste as good as before but even this is not always the case. it depends on the eggplant itself.

Actually since you are making eggplant parm, you may not notice any taste difference

I am confused by this post, they would not be dangerous...just browned from overnight and air.

I would have used them. Did you and how did it turn out?
